A Taste of the Tropics

Desserts are my thing.  If you’ve read this blog for any time, you know that I like to have a little something sweet in the evening.  Usually ice cream is my go to dessert – just ask Mike about how excited I was when the local Diary Queen re-opened in mid-February after their annual three month hiatus. 

Apparently I wasn’t the only one in town that was glad to see the store re-open.  The crowd was constant all afternoon.

This dessert combines the flavors of the tropics with a little bit of pineapple, a little bit of ice cream and a little bit of caramel.  Caramel is really easy to make at home and I can assure you, you aren’t going to find rum caramel at the grocery.  Look at how beautiful this caramel is.

Broiled Pineapple with Rum Caramel and Vanilla Ice Cream

1/2 cup sugar
3 tbsp rum
3 tbsp water
1 tsp fresh lemon juice
1/4 cup heavy whipping cream
1 tsp vanilla

6 pineapple slices (fresh or canned)
3 tbsp brown

Vanilla ice cream

For the rum caramel:
In a medium saucepan combine sugar, rum, water and lemon juice.  Cook over medium-high heat, stirring constantly, until the sugar dissolves completely, 2 to 3 minutes.  Once the sugar is completely dissolved, bring the mixture to a boil, reduce heat back to medium and cook without stirring until golden.  This can take anywhere from 10 to 15 minutes.  Watch closely during this process because once it starts to turn golden it’s going to go from barely golden to a beautiful deep golden color very quickly.  Remove the pan from the heat and carefully add the cream, stirring constantly.  (The mixture is going to bubble vigorously so you may want to add the cream over the sink or with a pan under the saucepan.)  Cool the caramel slightly.

For the broiled pineapple, preheat the broiler to high.  Arrange pineapple slices on a foil lined broiler pan and sprinkle evenly with brown sugar.  Broil about 5 inches from the heat for about 10 to 12 minutes or until the brown sugar is golden.

To assemble, place broiled pineapple on a plate, top with a scoop of ice cream and drizzle with cooled caramel.
